Baseball players push their bodies to the limit, and during flu season, staying healthy is just as important as training. This homemade Chicken Noodle Soup is packed with nutrients that support the immune system, aid recovery, and provide comfort when feeling under the weather. Pair it with a warm whole-grain roll for a balanced, energy-boosting meal.


Ingredients

For the Soup:

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 8 cups low-sodium chicken broth
  • 2 cups shredded cooked chicken (preferably from a whole roasted chicken) I typically purchase whole chickens from Costco.
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 2 cups whole wheat egg noodles (or regular egg noodles)
  • 1 tablespoon fresh parsley, chopped (optional)
  • Juice of ½ lemon (for extra immune support)

For the Whole-Grain Rolls:

  • 1 cup warm water (about 110°F)
  • 1 packet (2 ¼ tsp) active dry yeast
  • 2 tablespoons honey
  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons olive oil

Instructions

Making the Soup:

  1. Sauté the Veggies: Heat olive oil over medium heat in a large pot. Add onion, garlic, carrots, and celery. Cook for about 5 minutes until softened.
  2. Simmer the Broth: Pour in the chicken broth and add salt, pepper, thyme, oregano, and bay leaf. Bring to a gentle boil.
  3. Add the Chicken: Stir in the shredded chicken and let it simmer for 10 minutes.
  4. Cook the Noodles: Add the whole wheat egg noodles and cook according to package instructions (usually 6–8 minutes).
  5. Finishing Touches: Remove the bay leaf, stir in fresh parsley, and squeeze in lemon juice. Adjust seasoning if needed.

Making the Whole-Grain Rolls:

  1. Activate the Yeast: In a bowl, mix warm water, yeast, and honey. Let sit for 5–10 minutes until foamy.
  2. Mix the Dough: In a large bowl, combine whole wheat flour, all-purpose flour, and salt. Add the yeast mixture and olive oil. Knead for 8–10 minutes until smooth.
  3. Let it Rise: Cover the dough and let it rise in a warm place for about 1 hour until doubled in size.
  4. Shape & Bake: Preheat oven to 375°F. Divide dough into 8–10 rolls, place on a baking sheet, and let rest for 15 minutes. Bake for 20–25 minutes until golden brown.
